Materials:
blindfolds, cups, ice or mini marshmallows
Directions:
Everyone gets a partner. One partner is blindfolded on all fours. Their partner rides on their back holding a cup of ice or mini marshmallows (ammo). The rider guides the horse by pulling on the ears to turn. The only command they can give is "fire," after which they must reload by putting another piece of ice or mini marshmallows in the horse's mouth. If you get hit twice, you are out.

We used this idea, but felt that spitting ice could be a bit painful, so we used mini marshmallows and it was super hilarious!
